Feeling tired and low on energy? Then this homemade honey granola recipe is just what you need! This healthy, tasty meal will give you a boost of energy and provide your body with the nutrients and vitamins it needs. Enjoy it for breakfast, as a snack or even for dinner. The beauty of homemade granola is that you can make it exactly the way you like it. Shop-bought granola often has too much or too little of something (Hello, who wants that many raisins? And why are they always so stingy with the chocolate chips?). And when you finally find the perfect one, it always runs out far too quickly.

When you make granola yourself, you can put in only your favourite ingredients, in exactly the amounts you like! For a crunchier granola, add more coconut oil and chia seeds. For a sweeter one, add more honey or another sweetener. If you love nuts or fruit, throw in an extra handful. And there you have it – the perfect granola! 😍

Today I made honey granola with nuts, but feel free to change and adapt the ingredients so the result is truly heavenly.

You will need:

  • 200 g rolled oats
  • a handful of walnuts
  • a handful of roasted hazelnuts
  • a handful of almonds
  • 1 tablespoon pumpkin seeds
  • 1 tablespoon hemp seeds
  • 1 tablespoon sunflower seeds
  • 1 tablespoon chia seeds
  • 1 tablespoon sesame seeds
  • 3 tablespoons puffed amaranth
  • 4 tablespoons coconut oil
  • 2 tablespoons honey
  • half a teaspoon ground Bourbon vanilla
  • half a teaspoon ground ginger
  • 1 teaspoon cinnamon

Method:

- Turn on the radio and find some good music. OK, now for real! ;)

- Preheat the oven to 180 °C.

- Put the coconut oil, honey, Bourbon vanilla, cinnamon and ground ginger in a small pan and warm over a low heat until the whole kitchen smells of coconut. Once the oil and honey have melted, everything is well mixed and your family is already asking what smells so good, you're ready for the next step.

- Tip the remaining ingredients into a bowl and mix well. Pour in the contents of the pan and stir everything together.

- When you're sure everything is well combined, spread the mixture over a baking tray and put it in the oven.

- Bake the granola for 15 minutes, stirring once halfway through so it bakes evenly on all sides.

- Once the granola is baked, comes the hardest step of all – waiting for it to cool. This is the secret to those big crunchy clusters! While you wait, you can make a smoothie to stir the granola into. I blended a banana, frozen blueberries and a little Greek yoghurt.

- Once the granola has cooled, sprinkle it over the smoothie.

Granola tastes especially good eaten outdoors in the sunshine. Enjoy!
